Screen adjust mode for JVC3000

First, I would like to thank so many people for putting up information about eh JVC 3000 projector.  I learned about the update here and just applied it!  Thanks guys.
 
One thing I did NOT UNDERSTAND, or get, is the adjustment for the Screen Adjust mode.  I put it up here. Where is this setting and what do I have to do to get there?
 
I have the Stuart Studio Tek 100, which they recommend for this projector. They say to use mode 70.  Does anyone know how to do that? How do I?
